Another delicious and fabulous combination of ingredients, that is quick to prepare and a delight to the palate.
ingredients (serves 6):
5 tbsp olive oil
200g chorizo, thinly sliced
225g red onion, chopped
1 large red pepper, seeded and roughly chopped
3 garlic cloves, finely chopped
1 tsp cumin seeds
2 x 400g cans chickpeas, drained and rinsed
2 tbsp freshly chopped coriander
juice of 1 lemon
salt and ground black pepper
method:

method:
In a frying pan, heat 1 tbsp of oil and cook the chorizo for 1 to 2 minutes or until lightly browned.
Remove the chorizo from the pan and set aside.
Fry the onion in the chorizo oil for 8 to 10 minutes or until browned.
Add the red pepper, garlic, cumin and chickpeas to the onion and cook for a further 5 minutes, stirring frequently.
Remove the pan from the heat and add the chorizo, coriander, lemon juice and remaining oil.

5 colheres sopa de azeite
200g chouriço, finamente fatiado
225g cebola roxa, finamente fatiada
1 pimento vermelho, sem sementes e cortado em cubos
3 dentes de alho, finamente picados
1 colher chá de sementes de cominho
2 latas de 400g cada de grão de bico cozido, escorrido e passado por água
2 colheres sopa de coentros frescos, picados
sumo de 1 limão
sal e pimenta preta moída na altura
preparação:
Numa frigideira grande, aquecer 1 colher copa de azeite e fritar o chouriço até este estar ligeiramente corado.
Retirar o chouriço da frigideira com uma escumadeira e reservar.
À cebola, juntar o pimento, o alho, os cominhos e o grão e cozinhar tudo por cerca de 5 minutos, mexendo com frequência para não queimar.
Retirar a frigideira do lume e adicionar o chouriço frito que havia sido reservado, os coentros picados, o sumo do limão e o restante azeite.
Rectificar de sal e pimenta e servir.
