Beetroot and coconut milk soup, topped with lime juice marinated scallops / Sopa de beterraba e leite de côco, com vieiras marinadas em sumo de lima.
Each time I visit Filipe's blog I always want to reproduce all of his creations and this soup, amazingly delicious, full of flavour and terrifically aromatic, was one of the recipes that I couldn't resist for more than one day.
To really realise what I'm talking about, you need to give it a try.
Filipe topped his soup with lime juice marinated sea bass but I thought that it would be nice with scallops and I was not wrong at all, as the combination of flavours was a stunner!!
ingredients (serves 3):
9 scallops, cleaned
2 limes
1 tbsp olive oil, plus extra for the scallops
1 onion, chopped
2 garlic cloves, chopped
30 dried curry leaves
2 large beetroots, peeled and cubed
1 red chilli, deseeded and finely chopped
1 cinnamon stick
2 cardamom pods, seeds only, crushed
1 tbsp curry powder (I used Marmita's homemade curry powder mixture)
400ml coconut milk
200ml water
salt flakes
method:
Place the scallops in a bowl and toss with a little olive oil and the juice and zest of 1 lime. Refrigerate while you are making the soup.
Heat 1 tbsp of olive oil in a large pan. Add the onion, garlic and curry leaves and cook until the onion is tender but without colour.
Stir in the cubed beetroot, chilli, cinnamon stick, cardamom and curry powder and cook for 2 to 3 minutes.
Add the coconut milk, water and a pinch of salt and cook over a medium low heat until the beetroots are cooked. This could take around 20 minutes.
Blitz the soup in a food processor, return to the pan, taste for salt and add more if needed.
If the soup is too thick, add a little more water until you have the right consistency.
Meanwhile, heat a griddle pan. Season the scallops with salt and grill them to taste drizzled with a little of the marinating jus.
Serve 3 scallops per person on top of the soup, and drizzle with fresh lime juice and lime zest.

O veredicto final?
Bom, só provando perceberão do que falo, pois é uma sopa tão cheia de sabor e tão aromática, que vai ser feita aqui em casa sempre que possível, acreditem!!
Segui a receita do Filipe à risca e a única alteração que fiz foi que utilizei vieiras em vez de robalo.
ABSOLUTAMENTE FENOMENAL!!!
